In 2005 he signed for Aberdeen in the SPL where he struggled initially. After a loan spell at Doncaster Rovers he forced his way back into the first team and by the time he left in 2007 he had made 54 league appearances.
In March 2007 Gary signed for English side Yeovil Town where he stayed for the remainder of the year, making eleven league appearances. In January 2008 he moved back to Ireland, signing for St Patrick's Athletic.
In two seasons at St Pats Gary made 61 league appearances before signing for Darlington in January 2010. He made 24 appearances for the club but they were relegated to the Conference in the summer of that year and Gary returned to Ireland once more, signing with his first club, Bray Wanderers in July 2010.
Gary made 14 league appearances for Bray in the latter half of the 2010 season, scoring twice, and went on to become one of the most impressive performers of the 2011 season, adding a further 29 league appearances to his Bray tally and scoring three times.
In December 2011, Gary Dempsey made the switch from Bray Wanderers to Waterford United. His club debut came in the 6-0 opening night defeat to Wexford Youths but the Blues went on to make the promotion play-off final where they lost out to Premier Division side Dundalk and Gar made 27 league appearances, scoring seven league goals along the way.
In January 2013 Gary returned for another spell at Bray Wanderers and played in 32 of the club's thirty-three league games as Bray escaped relegation thanks to an end of season play-off win over Longford Town. He retired at the end of the season but in July 2014 he returned to LoI football when he signed for Johnny McDonnell at Shelbourne. He made his debut for Shels against Shamrock Rovers B on 20 July 2014 and made 10 league appearances as well as playing in both of the club's unsuccessful promotion play-of ties against Galway FC.
At the end of the 2014 League of Ireland season Gary joined Wexford side North End United.
